Chicken Momos

Well,its been a while since I last posted..But never late!! 😉

Momos!! Gosh! have always been one of my favourite starters….just cant miss out on ’em for any possible reason!!

Anyways!! Dont be surprised if you find a fusion of Chinese and Indian ingredients in my recipe..cos that’s how I like it!! 😉

Lemme give u a quick list of the things required!! 🙂

For the dough:

  • 150 grams refined flour
  • 1/4 teaspoon baking powder
  • a pinch of salt
  • water of kneading

For the filling:

  • 250 grams Minced Chicken
  • 1/2 cup chopped Onions
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 2 tablespoons Soy Sauce
  • 1/2 teaspoon chilly powder
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon vinegar
  • 1 teaspoon Oil
  • salt to taste
  • a bunch of finely chopped coriander

Cooking steps:

  1. Mix all the ingredients of the filling together in a bowl and keep it aside.
  2. Knead and make a firm dough of refined flour,baking powder and salt.
  3. Roll the dough into very thin 4-5 inch rounds.
  4. Take each round piece and place the filling in the center
  5. After bringing the edges together,twist and seal.
  6. Steam in a steamer for about 10-12 minutes and serve hot.

Momos taste awesome when served with a spicy chilly sauce..but I skipped the whole process of making it and went for tomato sauce…!! 😉

Capsicum Soy Glazed Chicken

Ingredients:

  • 600 grams Chicken breast boneless
  • 2 Tomatoes
  • 2 Capsicum
  • 2 Onions
  • 1/2 Garlic bulb
  • 4 tablespoons Olive oil
  • Coriander leaves
  • 2 tablespoons Honey
  • 2 tablespoons Ketchup
  • 2 teaspoons Soy sauce
  • 4 tablespoons Mayonnaise
  • 1 teaspoon Vinegar
  • 1 teaspoons Lime juice
  • Salt to taste

Cooking Steps:

For chicken:

  1. Mix mayonnaise,soy sauce,lime juice,salt,honey,ketchup,olive oil and chopped coriander together.
  2. Marinate the chicken breasts with the mixture prepared.
  3. Refrigerate for 30 minutes.
  4. Pre-heat the oven on 250 degrees.
  5. Grease an oven-proof dishes and bake the chicken breasts uncovered for 20 minutes,until done.

For sauce:

  1. Heat oil in a pan.
  2. Add chopped garlic,diced capsicum,diced tomatoes and chopped onions to it.
  3. Cook until all the vegetables are done.
  4. Blend all the vegetables together.
  5. Add salt to taste.
  6. Pour the sauce over the baked chicken breasts and garnish with fresh coriander leaves.
**Chicken breasts can also be shallow fried in a pan(if oven is not available).
                   Serves 4

Chocolate Lava

Ingredients:

  • 50 grams Powdered sugar
  • 100  grams Unsalted butter
  • 100 grams Bittersweet chocolate
  • 1/2 tablespoons Milk
  • 1 Egg

Cooking steps:

  1. Melt chocolate and butter together,either on a double boiller or in a microwave.
  2. Mix well.Set aside.
  3. Add powdered sugar to the egg whites and blend well.
  4. Add milk to the sugar and egg blend.
  5. Mix the blend with the chocolate and butter mixture.
  6. Grease ramekin moulds with butter and sprinkle flour.
  7.   Pour the prepared mixture equally in two moulds.
  8. Pre-heat the oven at 180 degree celsius.
  9. Bake the cup-cakes for 10 mints, till the batter rises a little.
  10.  Hold a plate from the open end of the mould and invert it in your plate.
  11. Serve hot.

**Tastes good with vanilla icecream.

*Baking the batter for a little longer will result in a yummy brownie 😉

Garlic Bread

Ingredients:

  • 100 grams Butter
  • 2-3 bulbs Crushed garlic
  • Bread

Cooking Steps:

  1. Heat butter in a pan.
  2. Add grated garlic to it.Mix well
  3. Cut the bread into four rectangular pieces and make a slit in each of its middle portions.
  4. Stuff it up with the butter mixture prepared above.
  5. Heat a pan,add a little butter and shallow fry the bread pieces.
**I used pav-bhaji breads instead of ordinary milk/wheat breads.
        Serves 4.

Choco Vanilla Cake

Ingredients:

For cake:

  • 3 Eggs(white)
  • 100 grams All-purpose Flour
  • 1/4 teaspoon Baking powder
  • 1/4 teaspoon Cooking soda
  • 100 grams Powdered sugar
  • 2 teaspoons Vanilla extract
  • 100 grams Unsalted butter
  • 1/2 cups Milk
  • 1/2 tablespoon Oil

For icing:

  • 3-4 teaspoons Butter
  • 4-5 tablespoons Cocoa powder
  • 1 cup Whipped cream
  • 1 cup Powdered sugar
  • 4-5 tablespoons Roasted almonds(optional)

Cooking Steps:

  1. Blend egg white with vanilla extract.
  2. Add powdered sugar and blend with an electric blender.
  3. Mix flour,baking powder,cooking soda together.
  4. Gradually add butter,milk and oil(one-by-one each) without forming lumps.
  5. Blend the prepared mixture on medium speed(with electric blender).
  6. Once the blending is done,grease and flour the baking bowl or a tray.
  7. Put it in a microwave for about 2-3 minutes(4-5 minutes,maximum).
  8. Prick the cake with a fork or a toothpick to check if it done.

Mix whipped cream,cocoa powder,powdered sugar and butter,together.And apply a thick layer over the cake.Top it off with roasted almonds(But I like it plain) 😀

Chicken Nuggets

Ingredients:

  • 2 Eggs
  • 200 grams Boneless chicken breast(cut into medium sized pieces)
  • 2 cups All-purpose flour
  • 2 cups Bread crumbs
  • Salt to taste
  • 4 teaspoons Black pepper powder
  • Oil(for deep fry)

cooking steps:

  1. In a bowl,beat eggs.
  2. Add salt and black pepper powder(2 teaspoons).Make a blend.
  3. Mix flour with black pepper powder(2 teaspoons).
  4. Spread flour and bread crumbs(each in separate flat plates).
  5. Thoroughly wash chicken pieces and drain out the remaining water.
  6. Roll the pieces one by one over the flour spread in a plate.
  7. Then dip the chicken pieces in the egg blend prepared.
  8. And then roll them over the spread bread crumbs.
  9. Heat oil in a pan and deep fry the chicken pieces,until they are  turn golden in color.

For dip:

    This is probably the simplest of the dips 😀
  1. 3 to 4 tablespoons tomato ketchup.
  2. 3 to 4 tablespoons mayonnaise(plain).Mix together.

Chicken Nuggets make a very good starter or an evening snack.

Cheese Chicken Kebab

Ingredients:

  • 100 grams Boneless Chicken breast(cut into 1 inch cubes)
  • 1 1/2 cups Yogurt
  • 1 teaspoon Green chilli paste
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 1/2 teaspoon Cardamom powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 cup Roasted chana dal powder(Bengal gram)
  • 1 Egg
  • 1 tablespoon Fresh coriander leaves
  • 1 cup Processed cheese(grated)
  • Salt to taste
  • Oil(for shallow fry)
  • 1 Capsicum
  • 1 Onion
  • 1 Tomato

Cooking Steps:

    

  1.  Break egg in a bowl.
  2. Add cardamom powder,green chilli paste,ginger paste,garlic paste,tumeric powder,roasted chana dal powder,yogurt,coriander leaves.Mix well
  3. Add the above mixture to the grated cheese.
  4. And season it with salt.
  5. Take the prepared mixture and marinate the chicken cubes.Set aside for about an hour.
  6. String the chicken pieces with capsicum,onion and tomato(also cut in cubes) in a skewers.
  7. To a non-sticky grill pan,add some oil and heat it up.
  8. Place the skewed chicken cubes over the grill pan and shallow fry until they are evenly golden in color.
  9. Serve hot.

SERVES 4

Coleslaw Fusion

Ingredients:

  • Cabbage(one medium sized head)
  • 5-6 Carrots
  • Salt to taste
  • 1-1 1/2 teaspoon ground Black Pepper
  • 100 gms Yogurt
  • Cheddar Cheese
  • 2 cups Milk
  • 3-4 tablespoon Flour
  • 40 gms Butter

Cooking Steps:

Cheese Sauce:

  1. Melt the butter.
  2. Add it to the flour.
  3. Then add seasonings to the above mix.
  4. Gradually add the milk and grated cheese next.
  5. Cook the above mixture on low flame for 5 minutes. (A little more milk can be added according to the consistency).  Keep Stirring for a good blend.

Coleslaw:

  1. Shred cabbage and grate the carrots.
  2. Add black pepper powder and a pinch of salt to yogurt.Make a smooth mixture.
  3. Then add the above prepared cheese sauce and the yogurt mix to the vegetables.Mix well.
  4. Serve cool.

Coleslaw tastes great even when sandwiched with toasted breads.
